800 g chicken thigh to 800 g tomatoes to 40 g cashews, finished with 50 g butter and 100 ml cream.
Ingredients
The marinade
- 800 g boneless chicken thigh, in 4 cm pieces
- 150 g (2/3 cup) thick full-fat yoghurt
- 1 tbsp ginger and garlic, crushed to a paste
- 1 tsp Kashmiri chilli powder
- 1/2 tsp turmeric
- 1 tsp ground cumin
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tbsp neutral oil
The gravy
- 800 g (6 medium) tomatoes, quartered
- 40 g (1/4 cup) raw cashews
- 100 g (1 medium) onion, quartered
- 1 tbsp ginger and garlic, roughly chopped
- 4 green cardamom pods
- 1 small piece cinnamon
- 2 tsp Kashmiri chilli powder
- 250 ml (1 cup) water
- 1 1/4 tsp salt
The finish
- 50 g (3 1/2 tbsp) unsalted butter
- 100 ml (scant 1/2 cup) double cream
- 1 tbsp dried fenugreek leaves, crushed
- 1/2 tsp garam masala
- 1 tsp sugar, only if the tomatoes are sharp
Method
- 1Cut the chicken thigh into 4 cm pieces.
- 2Mix the marinade and coat the chicken in it.
- 3Chill 4 hours, or overnight.
- 4Heat the oven grill to its highest setting, or a heavy pan on high.
- 5Grill the chicken 6 minutes a side, until it chars in patches.
- 6Set it aside with every drop of juice it released.
- 7Simmer tomatoes, cashews, onion, ginger, garlic, whole spices and 250 ml water, covered, 20 minutes.
- 8The tomato skins should lift away and a cashew should crush under a spoon.
- 9Lift out the cinnamon and keep the cardamom.
- 10Blend smooth, then push the purée through a sieve.
- 11Return it to the pan with 2 tsp chilli powder and 1 1/4 tsp salt.
- 12Cook 15 minutes on medium, until it darkens from red to brick.
- 13Add the butter in pieces and stir until the gravy turns glossy.
- 14Add the chicken and its juices, and simmer 8 minutes.
- 15Take the pan off the boil, then stir in the cream.
- 16Crush the fenugreek leaves between your palms and add them with the garam masala.
- 17Rest 10 minutes before serving.
What usually goes wrong
It tastes like tomato soup with chicken in it
The gravy was not reduced. It has to lose about a third of its volume and turn from red to brick before the butter goes in. 15 minutes on medium is the floor, and a wide pan gets you there faster than a deep one.
The gravy is grainy
The cashews were undercooked, or it was not sieved. Cashews need the full 20 minutes of simmering, and the sieve is not optional in a dish whose entire character is smoothness.
The chicken is dry
Breast, or too long in the gravy. Thigh is the canon here because it survives both the char and the simmer. With breast, grill 4 minutes a side and add it in the last 3 minutes only.
It came out bright orange
That colour is dye, or chilli powder used as dye. Kashmiri chilli plus reduced tomato gives a deep brick red. If yours is pale, reduce it further rather than adding more chilli.

Can I make butter chicken without a tandoor or a grill?
Yes. Sear the marinated pieces in a dry, very hot heavy pan in 2 batches, 3 minutes a side, until dark patches form, then wipe the pan and start the gravy in it. The char is flavour, not decoration, so what you cannot skip is the high heat; what you can skip is the equipment.
Thigh or breast?
Thigh. It holds 8 minutes in the gravy without tightening, and its fat is part of why the dish reads rich at only 100 ml of cream. Breast works if you treat it as a garnish added at the end rather than something that simmers.
Which tomatoes do I buy abroad?
Out of season, 2 cans of whole plum tomatoes, 800 g total, beat pale supermarket fresh ones and need 5 minutes less simmering. Fresh Roma or plum tomatoes are the target; large watery salad tomatoes will make you reduce for 25 minutes instead of 15.
